Start with the actual feed condition
A clarified juice places a different load on the transfer pump and heat-transfer surface from a fibrous puree. Record the product temperature, fibre or particle distribution, air content and viscosity across the expected run rather than treating the fruit name as a machine specification.
An upstream balance tank, filter or deaerator may be present in the surrounding line. The thermal unit receives the selected feed and needs stable supply pressure and flow; optional preparation is identified separately in the supply scope.

Connect feed, heating and holding
The feed pump moves product through the selected concentric tube passage. Heating service remains in a separate passage while the food reaches its selected condition. A defined holding route then relates measured flow to residence time.
For a puree with pieces, a large passage alone does not prove the centre of each piece reached the target condition. Particle profile, flow behaviour and thermal history need assessment for the recipe.
Design the outlet for its actual receiver
Cooling can prepare product for a chilled bulk tank or another receiving step; hot-fill and aseptic routes demand different outlet temperatures and downstream equipment. The selected cooling service and control response follow the packaging process.
List the inlet and outlet connections, utility supply, cleaning return and downstream stop response in the equipment scope. The pasteurizer is a thermal section and does not by itself supply a complete filling line.
A useful configuration comparison
The operating point is specified with the product and conditions rather than inferred from an unrelated family rating. The following distinctions help choose which trial information matters.
| Feed | Selection attention | Evidence to review |
|---|---|---|
| Clear or lightly cloudy juice | Feed stability and thermal/cooling duty | Inlet temperature, flow range, desired outlet |
| Fibrous puree | Passage, pump and pressure loss | Texture, fibre load and behaviour while warm |
| Puree with discrete pieces | Residence and particle heating | Piece distribution and product-process assessment |
